Two years of barrel aging for more structure and complexity

For the Chianti Classico Riserva, Sophie Conte uses grapes from the medium-aged vineyards of Tregole. The vinification follows the same process as for the basic Chianti Classico: whole grapes are fermented in cement tanks, with alcoholic and malolactic fermentation taking place in parallel. After a very gentle pressing, the wine ages for two years in used tonneaux.
After bottling, the wine is stored in the cellar for some time for additional bottle aging. The Chianti Classico Riserva displays robust aromas of dark cherries and berries, complemented by warm spice notes such as cloves and juniper. The tannin structure is pronounced but well-integrated. A wine with a long shelf life, it pairs well with hearty meat dishes.

Medium-aged vines for Riserva quality

The grapes for Chianti Classico Riserva come from special vineyards, neither the youngest nor the oldest in Tregole. These produce concentrated and complex flavors. The altitude and the special soil conditions shape the character of the wine.
Here, too, Sophie relies on her proven method of whole-bunch fermentation. The parallel execution of alcoholic and malolactic fermentation is a demanding process, but one that Sophie prefers. Two years of aging in used wooden barrels gives the wine additional complexity without overly influencing the oak.

Handcraft and organic farming

Like Chianti Classico , Chianti Classico Gran Selezione , and the special white wine Il Chicchero —all made from Sangiovese grapes—Chianti Classico Riserva is also made from organically grown grapes. Hand-picking allows for an initial selection in the vineyard. In the cellar, intervention is minimal—this has been Sophie's philosophy since her first vintage in 2015.
Production is limited by the small vineyard area of just 5 hectares. Quality clearly takes precedence over quantity. The Riserva perfectly embodies Tregole's approach: traditional grape varieties, modern cellar technology, and respectful treatment of nature.

Experience Tregole: Wine and Hospitality

The winery, with its long history—first documented in 1000 AD—combines wine production with hospitality. The Conte family acquired the property in 1998, and Sophie has been producing her own wines since 2015.
Guests can stay in the apartments and taste the wines on-site. Its location in the municipality of Castellina in Chianti makes Tregole an ideal base for exploring Chianti Classico. The pool and terraces offer views of the characteristic landscape with its three valleys.
Guests can receive culinary inspiration from Sophie's mother, Edith. She cooks for guests upon request and also holds cooking classes.
