Vin Santo is a Tuscan specialty that stands for craftsmanship and patience. The grapes, mostly white varieties, are hung up to dry for two to three months after harvest. This process concentrates the sugar and aromas, while the noble rot provides the typical taste. After pressing, the wine is often aged for several years in small oak, mulberry or cherry barrels. The result is a dense, amber-colored sweet wine with a high residual sugar content, which nevertheless never seems cloyingly sweet thanks to balanced acidity.
Vin Santo seduces with aromas of dried apricots, figs, honey, nuts, caramel and a hint of coffee. Fine notes of citrus peel and the scent of straw give it additional depth. Each tasting reveals new nuances - a wine that invites you to meditate.
