A fruity Sangiovese-Merlot symphony
It is safe to say that Il Granaio Toscana IGT is Savignola Paolina's premium wine. However, this powerful red - a cuvée of Sangiovese and Merlot, varying in proportion depending on the vintage, which matures for 14 months in French oak barrels - is only produced in the best years. The decisive factor for Ludovica Fabbri, owner and winemaker at Savignola Paolina, is the perfect balance of fruit and spice, combined with velvety and power. Cherries and dark berries harmonize with chocolate and blackberry aromas in a fruity symphony. Spices such as pepper and juniper complete the fruit accord. What impresses about Il Granaio is its pleasant mildness and fine acidity, without the elegant structure being pushed into the background. In a certain way, Il Granaio is so balanced that it can almost be described as "polite on the palate". But enough pleasantries: Just buy it, uncork it and enjoy! Over and over again!
A small winery with great red wines
Savignola Paolina is a small winery in a picturesque location between the towns of Panzano and Greve in Chianti. In addition to the beautiful estate, the property covers an area of eight hectares, of which around five hectares are planted with vines. The autochthonous Sangiovese grape variety is mainly cultivated. However, Colorino di Toscana, Malvasia nera and a little Merlot can also be found in the hills surrounding the winery. The decisive factor in the selection of grape varieties is, of course, the terroir. Because only those varieties were selected that ultimately express the terroir perfectly in the wine.
Every single red wine is a poem...
A blend of 85 percent Sangiovese and 15 percent Colorino and Malvasia nera results in a Chianti Classico DOCG that you won't soon forget. The Savignola Paolina range also includes a Chianti Classico Riserva - made from 90 percent Sangiovese and 10 percent Colorino. A blend of 85 percent Sangiovese and 15 percent Colorino and Malvasia nera - as in the Chianti Classico - is used for the Chianti Classico Gran Selezione and the Chianti Classico Gran Selezione Cru. The grapes for the Cru come from a very special single vineyard - which is why only 800 bottles are bottled in total. Savignola Paolina's premium wine is definitely the Il Granaio Toscana IGT, which is only produced in the best years. At the moment it is still a cuvée of Sangiovese and Merlot, but in the future Il Granaio is to become a pure Merlot. Overall, Savignola Paolina's red wines are all classic, traditional and very accessible - but each one is a poem in its own right. And shush! Another real insider tip among gourmets...
Savignola Paolina: a thoroughly feminine winery
The Savignola Paolina winery has been owned by the Fabbri family since 1780. How the winery got its name is a long story: the first half of the name - the word "Savignola" - dates back to Etruscan times. What exactly it means must unfortunately remain unanswered at this point. But it is all the clearer where the second half of the name comes from: this was only added after the Second World War, when the resolute and legendary Paolina Fabbri managed the estate and gave it her name without further ado. Since then, the winery has been called "Savignola Paolina" instead of "Savignola". After her death, her grandniece, the trained oenologist Ludovica Fabbri, took over the winery in 1998. This makes her the fourth generation of the Fabbri family to make wines at Savignola Paolina. However, there have been some changes in recent years: 70 percent of the winery is now owned by the Swiss couple Luzius and Manuela Caviezel, while Ludovica Fabbri still owns 30 percent. She is also responsible for the winemaking - and she herself says that she can now concentrate more than ever on her strengths, namely working in the vineyard and in the wine cellar
