Straightforward & supple with a fruity aroma
Only the best grapes from the best vineyards of Savignola Paolina in Greve in Chianti, not far from Florence, are used to create the full-bodied Riserva. They are harvested by hand, meticulously selected and processed with the utmost care. The grapes are 90 percent Sangiovese and 10 percent Colorino. The wine matures for 14 months in French oak barrels before being allowed to rest for a few months in the bottle. The aim is to emphasize the character of the indigenous Sangiovese grape variety. Because only when the Sangiovese, often referred to as the "bitch", is treated with care and understanding can it reveal its full dignity, pride and uniqueness. And this Chianti Classico Riserva does just that. Here you have a red wine in your glass that expresses the true typicity of a Chianti Classico Riserva. A wine in which you can literally taste the careful processing of the grapes. A wine that is stylish and straightforward, yet elegant and supple with a beautiful structure full of fruit and spice. The fruitiness is characterized by aromas such as blackberries and plums, which are joined by spices such as juniper and pepper. Of course, this wine has great ageing potential... But honestly, why wait when it tastes so good now. Simply with a good meal or on a cozy evening with friends.
Savignola Paolina: A small winery with a great tradition
On the way from Panzano to Greve in Chianti, you pass the Azienda Agricola Savignola Paolina winery. A total of five hectares of sustainably cultivated vineyards nestle in the rolling Tuscan hills. The winery has been owned by the Fabbri family since 1780. The most famous member of the family was undoubtedly Paolina Fabbri, who not only helped the wines to gain a good reputation, but also gave the winery her name without further ado. Since then, the winery has been called Savignola Paolina instead of just Savignola. In 2015, the owner Ludovica Fabbri sold 70% of the shares in the estate to the Swiss couple Luzius and Manuela Caviezel, while Ludovica still owns 30%. This means that the qualified oenologist and her long-time employee Luca can now concentrate fully on making wine. Always with the aim of producing quality rather than quantity. And so Savignola Paolina has remained a small but very, very fine and fundamentally classic-traditional winery to this day. In recent years, however, the estate has invested heavily in new barrels and in the cellar, tasting and experimenting with new vinification methods. So it will be interesting to see what happens in the future.
Vino rosso, red wine, red wine - as far as the eye can see
Savignola Paolina's premium wine, Il Granaio Toscana IGT, is only produced in the best vintages. The Chianti Classico Gran Selezione and the Chianti Classico Gran Selezione Cru are two other top wines from the Savignola Paolina range: a blend of 85 percent Sangiovese and 15 percent Colorino and Malvasia nera are used for these two reds. The same blend that is also used for the very drinkable Chianti Classico DOCG. In contrast, in the Chianti Classico Riserva, the dominant 90 percent Sangiovese is rounded off with 10 percent Colorino. The result is an elegant and smooth wine with a beautiful structure full of fruit and spice, for which only the best grapes are used. These are all red wines with their own unique character - just like the woman who makes them - but which nevertheless remain easily accessible and wonderfully smooth. Real drinking pleasures that are revealed here from this small but extra-fine winery.
