A wine with a female signature
The Chianti Classico DOCG from Azienda Agricola Savignola Paolina is an easy-drinking red wine with style and character. This red has maintained a consistently high level of quality for years. After all, the winery has also been owned by the Fabbri family for decades - recently with Swiss participation. This estate produces wines that are characterized by strong women. First it was Paolina Fabbri, who not only gave the winery her female signature, but also her name, Savignola Paolina. Today, it is Ludovica Fabbri who is responsible for the signature style of the wine production. The two women's overriding maxim: Quality, quality and more quality. The Chianti Classico is made at Savignola Paolina from 85 percent Sangiovese and 15 percent Colorino and Malvasia nera. This Chianti Classico matures for 12 months in French oak barrels before being bottled. And then, in the glass, this Chianti Classico reveals itself in an intense ruby red, while the characteristic and inviting, slightly spicy-fruity aroma makes its way to the nose. The taste delivers what the nose promises: berries, cherries and sour cherries embedded in a velvety vanilla aroma can be found on the palate. Elegant tannins and fine acidity complete the harmonious impression. A soft, velvety drinking wine that you won't forget in a hurry.
Soft red wines with classic elegance
The wines produced at Savignola Paolina are all very soft, very accessible without losing their identity. The premium wine from Savignola Paolina is without question the Il Granaio Toscana IGT, which is only produced in the best years. Ludovica Fabbri demonstrates her flair for winemaking with two other top wines: the Chianti Classico Gran Selezione and the Chianti Classico Gran Selezione Cru. 85 percent Sangiovese and 15 percent Colorino and Malvasia nera are used. The same blend that is also used for the Chianti Classico DOCG. Savignola Paolina also produces a Chianti Classico Riserva, in which 10 percent Colorino is added to the 90 percent Sangiovese. The result is an elegant and smooth wine with a beautiful structure full of fruit and spice, for which only the best grapes are used. For many years, Ludovica has been committed to the sustainable cultivation of her vineyards, most of which are planted with Tuscany's indigenous grape variety, Sangiovese. In addition to tradition, the terroir also plays a decisive role in the selection of grape varieties. Azienda Agricola Savignola Paolina: An insider tip from Greve in Chianti
The Azienda Agricola Savignola Paolina has a total of five hectares of vineyards in Greve in Chianti. The winery has been owned by the Fabbri family since 1780. Under Paolina Fabbri - to whom the winery also owes its name - Savignola Paolina celebrated its first successes in the period between the two world wars. In 1998, Ludovica Fabbri, who studied oenology, took over the winery from her aunt. In 2015, Ludovica sold 70 percent of her winery to the Swiss couple Luzius and Manuela Caviezel, while she still owns 30 percent. This means that Ludovica, together with her long-time employee Luca, can now concentrate fully on what is close to her heart and her strength, namely making wine. Always with the quality standard of producing quality instead of quantity. And so Savignola Paolina has remained a small but very, very fine and fundamentally classic-traditional winery to this day. In the future, modern vinification methods will also be used. And since Ludovica can devote herself one hundred percent to wine production, she is currently trying out and experimenting in every nook and cranny. In recent years, the winery has also invested heavily in new barrels and in the cellar.
