In Italy and around the world, the name Cavalli stands for products of the highest quality: Foho Fiorentino is a particularly "hot" delicacy from Cavalli. Hot because "Foho" means fire and because it is a fiery chili pepper oil. Habanero chili peppers are fermented in an extra virgin olive oil using a process specially developed by Tommaso's brother-in-law Stefano. In this way, the taste of the fresh fruit - both the heat and the sweetness of the habeneros - is gently preserved in the oil. The spiciness can be enjoyed in small doses by sparingly spraying the oil onto vegetables or grilled meat, for example. Just whenever life needs a little spiciness. 

Cavalli - a synonym for Italian lifestyle & style

When you hear the name Cavalli, you immediately think of the extravagant creations of fashion designer Roberto Cavalli, which can be admired on the catwalks of the world and on stars of all nations. But the name Cavalli stands for much more: for example, for the successful trotting horses that son Tommaso breeds at Tenuta degli Dei. For the precious grappa, which is made from the estate's own grape marc. Or for the famous Roberto Cavalli Vodka, which is a must at every jet-set party. Cavalli also stands for the new Ginarte, which is refined with herbs from Tuscany. And last but not least: for some years now, the name Cavalli has also been synonymous with top wines from the Chianti Classico! The Cavallis are simply a family with a sense of good taste...

Red wines with international flair and Tuscan roots

Tommaso has only been working as a winemaker since 2000. He simply felt that it would be a shame not to grow wine on this piece of land in the heart of Chianti Classico. For this reason, he asked the oenologist Carlo Ferrini, who is well-known beyond Italy's borders, for his opinion. And he agreed with Tommaso one hundred percent. Together, the five hectares in question were divided into plots. Only the grape varieties Alicante, Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot are now planted - all international varieties. The first Cavalli wine was presented with the 2004 vintage: the Tenuta degli Dei CavalliToscana IGT - a blend of Cabernet Sauvignon, Cabernet Franc and Petit Verdot. An IGT, Le Redini, was later added to the range. This is a blend of Alicante and Merlot grapes. Since 2013, Cavalli has also been producing a Chianti Classico called Forcole. The Sangiovese grapes required for this come from a vineyard very close to the estate, which Tommaso has leased. There is a second vineyard on the Cavalli estate in Florence. The Alicante grapes from around 1,800 vines are also processed at Tenuta degli Dei.

Tenuta degli Dei: a heavenly estate with horses, dogs, llamas and vines

Back in the early 1970s, Tommaso's father, the famous Italian fashion designer Roberto Cavalli, bought the estate below the Romanesque church of San Leolino, which is just a hill away from Panzano in Chianti. For several years, the designer, who is originally from Florence, used the estate as a place of peace and tranquillity away from the hustle and bustle of the jet-set fashion world. Since 1989, Tommaso Cavalli, Roberto's son, has lived on the 70-hectare estate with his wife and children, two dogs, llamas and many fine trotting horses. And it was he who turned his father's original retreat into a flourishing business.
